Mediterranean Bolognes

Mediterranean bolognese with ILIOS Mediterranean blend

Bolognese is a classic Italian sauce that has been enjoyed for centuries. It’s a hearty and flavorful sauce made with ground meat, vegetables, and tomatoes, and is typically served over pasta. In this recipe, we’re going to elevate the traditional Bolognese sauce by using ILIOS Mediterranean blend.

Ingredients:

  • 1 tbsp vegetable oil
  • 3 tbsp butter + 1 tbsp for tossing pasta
  • 1/2 cup diced onion
  • 2/3 cup diced celery
  • 2/3 cup diced carrots
  • 3/4 lb ground beef chuck
  • 1 tbsp ILIOS Mediterranean blend
  • Salt and pepper to taste
  • 1 cup whole milk
  • 1 cup dry white wine
  • 1 1/2 cups canned Italian plum tomatoes with juice
  • 1.5 lbs pasta
  • Fresh grated parmesan cheese for serving
 

Instructions:

  1. In a large pot, heat the oil and 3 tablespoons of butter over medium heat. Add the onion, celery, and carrots and cook until the onion is translucent, about 2 minutes.

  2. Add the ground beef and season with 1 tbsp ILIOS Mediterranean blend, salt and pepper. Cook the beef until it loses its pink color, crumbling it with a fork as it cooks.

  3. Pour in the milk, stirring frequently, and let simmer until it has evaporated completely.

  4. Pour in the wine and let it simmer until evaporated, then add the canned tomatoes with their juice and stir everything together. Turn the heat down to low and let the sauce simmer, uncovered, for at least 3 hours or more, stirring occasionally. If the sauce begins to dry out, add 1/2 cup of water as needed. The sauce should be thick and the fat should separate from the sauce by the end. Taste and adjust seasoning as needed.

  5. Cook the pasta according to package instructions. Drain and toss with the remaining 1 tablespoon of butter. Serve the pasta with the Bolognese sauce on top and grated parmesan cheese on the side.
