In our smoked chicken recipe, we’ll show you how to create a dish that combines the smoky goodness of the grill with the tantalizing flavors of our handcrafted blend. Ingredients:

  • 1 whole chicken 
  • ILIOS Barbecue Blend
  • Wood chips or chunks for smoking (such as hickory, applewood, or mesquite)
  • Brown sugar (optional, for a sweeter flavor)
  • Olive oil or vegetable oil (for coating the chicken)
  • Salt and pepper (to taste, if desired)

 

Step 1: Preparing the Smoker

  1. Follow the instructions for your smoker to ensure it is set up properly and preheated to a temperature of around 225°F (107°C). Preheating the smoker is crucial for maintaining a consistent temperature throughout the cooking process.

 

Step 2: Seasoning the Chicken

  1. Drizzle a small amount of olive oil or vegetable oil over the chicken pieces to help the spice blend adhere.
  2. Generously coat both sides of the chicken pieces with ILIOS’ Barbecue spice blend. Make sure to cover them evenly, ensuring every bite is full of flavor. If you prefer a sweeter flavor, you can sprinkle a little brown sugar on the chicken as well.
  3. Season with salt and pepper to taste, if desired.

 

Step 3: Smoking the Chicken

  1. Soak the wood chips or chunks in water for about 30 minutes to an hour. This will help create a steady and flavorful smoke.
  2. Drain the wood chips or chunks and place them in the smoker box or directly on the coals, depending on your smoker type.
  3. Arrange the seasoned chicken pieces on the smoker’s grates, making sure they are evenly spaced to allow for proper air circulation.
  4. Close the smoker and let the chicken smoke for about 3 to 4 hours, or until the internal temperature of the chicken reaches 165°F (74°C). 
  5. During the smoking process, you may need to add more wood chips or chunks to maintain a steady smoke.

 

Step 4: Resting and Serving the Smoked Chicken

  1. Once the chicken reaches the desired internal temperature, carefully remove it from the smoker and transfer it to a clean plate or cutting board.
  2. Allow the smoked chicken to rest for a few minutes. This resting period allows the juices to redistribute, resulting in moist and tender meat.
  3. Serve the smoked chicken alongside your favorite sides, like our traditional greek salad.
